Bass baked Cajun-style

5 lb. Bass fillets
¼ t. Garlic Powder
1 lg. Onion, chopped
1 bell pepper, chopped
1/2 stick Butter
2 (8oz.) cans Tomato Sauce
1 (15oz.) can Whole Tomatoes   
juice of 1 Lemon
1 C. Water
1 C. Cooking Wine
½ C. Green Onions
½ C. Parsley
¼ t. Tabasco sauce
Salt & Pepper to taste
 
Sprinkle fish with lemon juice and season with garlic, salt and pepper. Saute' onions, bell pepper and parsley in a large pot with the butter until tender. Add tomato sauce, whole tomatoes, water, wine and lemon juice and cook over medium heat for 45 minutes, uncovered. Add seasoning to taste along with a dash of Tabasco sauce. Cook for another 10 minutes over medium heat. Pour this mixture over the fish fillets you have placed in a deep baking dish. Bake in 325 degree oven for 45 minutes. Sprinkle with parsley and onion tops and serve, garnishing with slices of lemon. Serves 6-8.

I bet that is awesome with catfish as well! Not a big bass fan. But will try it!
