« on: September 23, 2009, 10:05:21 AM »
Serving for 4

4 chicken breast fillets no skin
2 cup of button mushrooms (do not wash mushrooms, wipe them clen if needed with a paper towel, if washed they will get soggy)
1 large sweet onion
butter
2 cups of mozzarella cheese (let it set out till it is room temperature)

Cut the chicken breasts in half horizontal
Put 3 or 4 pieced of butter in a large skillet
lightly brown the chicken on both sides till done
remove from skillet
place butter mushrooms and onions in skillet and cook on low till tender till tender
Place chicken on a serving platter pour the onion and mushroom mixture over the chicken carefully covering all the chicken
Sprinkle the cheese over the onions and mushrooms and it melts quickly.

Serve and enjoy (simply one of the best quick dishes you can cook!)

You will eat it often! I love it and so does every body we ever cooked it for. But my wife is a good cook!
