I make one piece strikers myself and do prefer them. You do have to start out with a good call though. There are so many variables to strikers it is just an individual choice. Different woods, the densities of the woods and their particular characteristics (oily woods ect.) all effect how they react to the calling surface. You can have 2 strikers made of the same wood identical in shape, and they will have slight differences with the tone they make, not to mention different pressures from the striker making tonal differences. So I feel its just an individuals choice. I carry a production 2 piece striker in my vest every year too and use it from time to time. I have always told people I have dealt with over the years that turkey calls are kinda like fishing lures. They have their different versions of pretty, some are better than others, and most all have capabilities of doing the same job. Most know that hens in the woods all sound so different (some really crappy too lol). If you have confidence in what you are using to call these birds in no matter what kind of call you prefer, your chance of success dramatically improves!
