A great soup for cold weather!
« on: January 10, 2017, 08:06:33 PM »
I like soups and stews, especially in winter.  So here it is, January, and, blessed with a great 2016 season, I found myself with several packages of turkey breast still in the freezer.  Miss Nina and I made a soup last week and I thought I would share it with ya'll.  It's hard to believe that anything so simple can be so good!

Start by boiling half a turkey breast, in chunks, for 20 min.
In the meantime, put the following in a crock pot:

One can of Campbells Cream of Celery soup. Do not add water.
One can of Campbells Chicken and Rice soup. Do not add water.
Two cans of Campbells Cream of Chicken soup. Do not add water.
One 12 oz frozen mixed vegetables (got mine at Wally World)
Two 10 oz frozen Mirepoix-onions, carrots and celery (also from Wally World)
One Campbells soup can full of water
One Campbells soup can full of milk
One teaspoon of McCormick crushed red peppers.

Now cut your boiled white turkey meat into small (less than half-inch square) pieces and add them to the pot.
Cook on high for 4 hours, or until the carrot pieces are soft, stirring it every 15 minutes or so.

Make, beg, borrow, or steal some cornbread and enjoy!
Tom
