Arkansas Chili

I have been stuck in the house a lot lately as some of you know. I got the urge to cook up a pot of chili this morning. Here she is on the stove cooking.





Recipe I use for Chili

Arkansas Chili

1 1/2 pounds deer burger
1 large red onion
1 Tbs. - Bacon Grease
2 tsp. - Minced Garlic 

Cut up the onion, put it in a big pot. Add the bacon grease and cook on high till the onions are limp. Add the burger and Garlic and cook till well done.

Next, mix these spices together in a small bowl:
4 Tbs. - Chili Powder
3 tsp. - Cumin
1 tsp. - Cayenne Pepper
2 tsp. - Paprika
2 tsp. - Ground Oregano
2 tsp. - Salt

Pour over cooked meat and stir till blended well.

Next add:
1 - 8 oz. can Tomato Sauce
1 - 12 oz. can Kidney Beans
1 – 12 oz. can Black Beans
1 - 4 oz. can Green Chili's
1 - 10 oz. can mild Rotel
1 - 10 oz. can water 

Stir it up good and bring to a boil. Reduce heat and cook on low for 1 hour or more, stirring every 20 minutes.

Four and a half hours of OT. Could have used a bowl of that a few hours ago. Too tired to eat now.

Have to love a recipe where bacon grease is an ingredient!  That looks mighty tasty!

I made a batch of Rickey's chili.......Simply AWESOME, if ya like it with an afterburner bite to it.... *bowing*

     My FIL said, it's the best batch of chili, I've ever made....
