Title: Fat Free Vegetable Chowder
Post by: L-Wes on January 12, 2010, 07:36:37 AM
Like a good vegetable chowder, but not the fat that comes with a cream-based soup.....Try this:   Make the chowder base by placing a can of butter beans and a small cooked potato in a blender; puree til smooth.  Make a strong broth by disolving one chicken cube and one vegetable cube in a cup of boiling water; add this broth to the base, a little at a time, until you get the consistency you want.  Then add an assortment of vegetables:  some canned or frozen sweet corn...canned beans (red, white or black)...cooked frozen mixed vegetables (I like a comb. of carrots, cauliflower and broccoli)...cooked diced potatoes, etc.   Stir well...heat til bubbly...ENJOY!

Not worried about the fat:  Use cream style corn, and add a generous helping of diced cooked ham....DELICIOUS!!!

Eat well,
L-Wes

That sounds pretty good. I like the chowder idea. I'll try it!
