Use your favorite sausage (not in the casing). 12 ounces
1/2 cup chopped onion
1/4 cup vegetable oil
3 cups fresh shredded hash brown potatoes
6 large eggs lightly beaten
1 cup shredded cheddar cheese
Brown the sausage in a large skillet over medium-high heat. Add the onion (peppers and mushrooms if you like) and cook until tender. Put the mixture in a bowl.
Add the oil to the skillet; when hot, add the potatoes and press evenly into the skillet. Cook over medium-high heat until golden brown on one side. Stir the eggs and the sausage mixture and scramble everything together, cooking to a desired consistency. Then scatter the cheese over the top. Cover with a lid and cook till the cheese melts.
Its simple and its really good. Yall enjoy........... This makes about 4 servings

David can throw down on some cookin....Mike that is just a sample...you shoulda been there when we visited...man i didnt think i could eat anymore... ::) well i can always eat more...and as long as my backs good buy then i will be readyto sling em...
