Artichoke - Oyster Soup
3 C. Green Onions, chopped
4 C. Oyster Liquid
3 pints fresh Oysters
(2) 14oz cans Artichoke Hearts, quartered
2 T. Parsley, chopped
1 C. Whipping Cream
Salt and White Pepper, to taste
1/2 tsp. Thyme
1/4 tsp. Cayenne Pepper
5 Bay Leaves
5 T. Butter
5 T. All-Purpose Flour
1 qt. Chicken Broth
Saute green onions, thyme, cayenne pepper and bay leaves in butter until the onions are tender. Whisk in flour. Add chicken broth and oyster liquid and simmer for 15 minutes. Add oysters, artichoke hearts and parsley. Simmer for 20 minutes. Remove bay leaves, stir in whipping cream and season with salt and pepper. Heat thoroughly, but do not boil. Serves 8-10.

Whipping cream is how heavy cream is labeled in stores today, not to be confused with whipped cream in a can! That would be yuck!
