So I tried this dish with chicken while I was in the Yucatan last month. I had to try to make it myself. I watched the video below and off I went. Picking up the ingredients wasn't too bad. I found just about everything I need at a local Latin grocery store. I was not able to find whole cumin seed and so I substituted ground cumin. Finding the banana leaves required a bit of searching, but they can be found in the frozen section of your local Asian grocery. I followed the recipe to the letter including grinding my own spices. I added a bit of fresh sliced onion, Hungarian pepper, and roma tomatoes for color.
I served the pibil with fresh tortillas, pico de gallo, refried black beans, and rice. It was superb, very tender and the taste you'll have to experience for yourself..
