Recipe we got off the net.. and I really like it!

2 Large Baking Potatoes
3 Tbsp. Thinly Sliced Green Onions
1/3 Cup Butter
1/3 Cup All-Purpose Flour
2 Tsp. Snipped Fresh Dill or 1/4 Tsp. Dried Dillweed
1/4 Tsp. Salt
1/4 Tsp. Pepper
4 Cups milk
3/4 Cup Shredded Cheddar Cheese
3 Tbsp. Thinly Sliced Green Onions (For Garnish)
4 Slices Bacon Cooked Crisp and Crumbled (For Garnish)
Scrub potatoes, pat dry, yoyo with a fork. Bake in 425 degree oven for 40 to 60 minutes or until tender. Let cool. Cut potatoes in half lengthwise, and gently scoop out each potato and chunk up. Discard skins.
In a large saucepan, cook 3 Tbsp. green onions in butter till tender; stir in flour, dill, salt, and pepper. Add milk all at once. Cook and stir till thickened and bubbly. Cook and stir for 1 minute more. Add potato pulp and 1/2 cup of the shredded cheese. Stir till cheese melts.
Garnish each serving with remaining cheese, bacon and green onions.
